Homemade Pancakes from Scratch

So I've been making small changes to take control of my I feed my family. However as a working mom, having extra time on my hands is myth. So one of the things I have started making is pancake mix, now I did not come up with this recipe and I can't remember where I found it. If the creator stumbles along this recipe please take credit and I thank you.

Whole Wheat Pankcake Mix


1 cup sugar
6 cups whole wheat flour
3 cups white flour
1/4 cup baking powder
1-1/2 cup instant dry milk powder
1 Tablespoon salt


Mix all together and store in an air tight container. Done, Easy right?


Now for the recipe to make the pancakes:


2 cups of mix (above)
1 egg
1-1/2 cup water, (I use half water and half milk sometimes)
3 Tablespoon oil


Option 1/2 cup: chocolate chips, strawberries, pumpkin, etc.


Note: I always add cinnamon and a little vanilla extract to my pancakes.


So Sunday morning everyone awoke from a quick slumber, aka girl sleepover. I went to sleep listening to giggles and awoke to them.

Now of course my well planning skills left us with enough maple syrup for the girls to use, so time to raid the pantry and fridge. Honey for mama and homemade blackberry jam for daddy.

After breakfast was complete and everything was cleaned, I of coarse made another batch of pancakes to freeze. Love having quick healthy breakfast options in the mornings.

BLT, Please

With the warm weather begging for crops in the ground, kid filled playgrounds, grill planned meals, I’ve been craving tomatoes. I went to the farmers market on Saturday morning for some lettuce and asparagus. Asparagus they had, but at last no lettuce. 

With more errands to run I decided to try a local grocery store I had not made it to. Root Cellar is a small grocery selling produce, herbs, dairy, meat and eggs from local farms. The store is lovely setup like a outside market with each bin displaying were the produce was raised. I looked around and what do I see but tomatoes, bibs of lettuce and a quick glance back to see the bacon. That’s right BLTs are on the menu.

That night we made up homemade french fries, while they bake in the oven, JP fried up the bacon in out cast iron skillet. Bread slices were toasted, tomatoes washed and slice. Then sandwiches were assembled with fries surrounding them.

The left over tomato was seasoned with salt and pepper to eat by itself, so since wasting any of it. Yummy I know!

And we are off to a good start:

So a few weeks ago I posted about starting seeds. So about a week and half since planting my seeds and they are starting to pop up from the dirt. I check them daily to see if they need to be watered and as they grow and lean towards the sun, I rotate their tray around to face the other direction. Its always encouraging when you see the little stem popping up and days later a leaf is forming.

Bunny, Eggs and Baskets....Oh my

We have never been in to the Easter Holiday, but I want to start celebrating a piece or Easter. Easter for me is the beginning of spring, life and growth. The sun shining bright to extend the days which were once darkened shortly after work.


Bunnies and eggs are both symbols of fertility, so Friday we made wonderful coca rice crispy nest with baby eggs. Super yummy and easy to make.

Community Easter Egg Hunt, was first on our list Saturday afternoon. We went with some friends with baskets in hand. Each age group took turns to collect eggs.

That night was filled with a house full of girls and one little boy. Little hands created little master pieces on their eggs. Next year I plan to investigate and do natural dyes.

When the night settled and our two girls were in bed, the easter bunny loaded up baskets, filled eggs and hid them for the hunt in the morning.

Morning was filled with smiles and surprises, as Avery discovered a basket filled with duct tape in an assortment of colors, bubbles, a chocolate bunny and a tooth brush. Sonya pulled out her new doll, book, bubbles, tooth brush and chocolate bunny. Both also received a Disney autograph book for the trip this June. Sonya's favorite thing......the toothbrush.


Then it was time to make brunch for Josh's family coming over. The menu included egg in a boat, individual hash browns, spiced bacon, and mini berry danishes. All courtesy of pinterest  pins and the blogs that housed the recipes. Now as my blogging continues I'll learn to stop and photograph the wonderful things I make, but it escaped me. Trust me that everything looked wonderful and tasted even better.

After tummy's settled and naps were taken, we went to visit great grandparents and deliver and Easter card. So I've seen lots of cute prints done with little feet, so I figured a bunny with the ears made of Sonya's feet would fit the holiday and cuteness. Easy to make and GGparents loved it.

It was a beautiful weekend filled with smiling faces.
